Prepare the Potatoes
Preheat your oven to 425°F (220°C). Wash and cut the red potatoes into quarters. In a large bowl, toss the potatoes with 2 tablespoons of olive oil, garlic powder, rosemary, thyme, salt, and black pepper until well coated.
Roast the Potatoes
Spread the seasoned potatoes on a baking sheet in a single layer. Roast in the preheated oven for 25-30 minutes or until golden brown and tender, stirring halfway through.
Prepare the Steak
While the potatoes are roasting, season the sirloin steak with the remaining 1 tablespoon of olive oil, salt, and black pepper on both sides.
Rest and Serve
Once cooked, remove the steak from the heat and let it rest for 5 minutes. Slice the steak and serve with the herb roasted red potatoes. Garnish with fresh parsley.
