Method

Soup Preparation

1

Sauté the Vegetables

In a large pot, heat the olive oil over medium heat. Add the chopped onion, celery, and carrots. Sauté until the vegetables are tender, about 5-7 minutes.

2

Add Garlic and Spices

Stir in the minced garlic, Old Bay seasoning, salt, and black pepper. Cook for an additional 1-2 minutes until fragrant.

3

Add Liquid Ingredients

Pour in the diced tomatoes with their juices and the chicken broth. Add the bay leaves and bring the mixture to a boil.

4

Simmer the Soup

Reduce the heat to low and let the soup simmer for about 20 minutes to allow the flavors to meld.

5

Add Corn and Crab

Stir in the frozen corn and lump crab meat. Continue to simmer for another 5-10 minutes, until heated through.

6

Finish and Serve

Remove bay leaves, stir in chopped parsley, and adjust seasoning to taste. Serve hot.
