Prepare the Cedar Plank

Soak the cedar plank in water for at least 1 hour before grilling to prevent burning.

Marinate the Salmon

In a bowl, mix olive oil, lemon juice, minced garlic, salt, and black pepper. Coat the salmon fillets in the marinade and let them sit for 20 minutes.

Cook the Spinach

In a large skillet over medium heat, add the spinach and cook until wilted. Stir in the cream cheese and heavy cream, mixing until smooth. Add Parmesan cheese, nutmeg, and red pepper flakes. Stir until well combined, then remove from heat.

Preheat the grill to medium-high heat. Place the soaked cedar plank on the grill for about 5 minutes until it starts to smoke. Place the marinated salmon on the plank, skin-side down, and close the grill lid. Cook for about 15-20 minutes, or until the salmon is cooked through and flakes easily.

Remove the cedar plank from the grill. Serve the grilled salmon alongside a generous portion of creamed spinach.
