Prepare the Ribs
Start by removing the silver skin from the back of the ribs. Rinse the ribs under cold water and pat dry with paper towels.
Apply the Rub
In a bowl, mix together brown sugar, paprika, black pepper, salt, garlic powder, onion powder, and cayenne pepper. Rub the mixture all over the ribs. Coat the ribs with yellow mustard to help the rub stick.
Let it Rest
Wrap the ribs in plastic wrap and refrigerate for at least 2 hours, preferably overnight to allow the flavors to meld.
Preheat the Oven
Preheat your oven to 300°F (150°C).
Bake the Ribs
Place the ribs on a baking sheet lined with aluminum foil, bone side down. Cover with another piece of foil. Bake for 2.5 to 3 hours until the ribs are tender.
Serve
Once cooked, let the ribs rest for 10 minutes before slicing. Serve with extra barbecue sauce on the side.
