Prepare the Apple Filling

In a large bowl, combine the diced apples, granulated sugar, brown sugar, cinnamon, nutmeg, and lemon juice. Toss to coat the apples evenly and let the mixture sit for about 10 minutes.

Assemble the Egg Rolls

Lay an egg roll wrapper on a clean surface, with one corner pointing towards you. Place about 2 tablespoons of the apple filling in the center of the wrapper. Fold the bottom corner over the filling, then fold the sides over and roll tightly to seal. Repeat with the remaining wrappers and filling.

Fry the Egg Rolls

In a large, deep skillet, heat the vegetable oil over medium heat. Once hot, carefully add the egg rolls in batches, frying until golden brown and crispy, about 3-4 minutes per side. Remove and place on paper towels to drain excess oil.

Prepare Cinnamon Sugar

In a small bowl, mix together the granulated sugar and cinnamon. While the egg rolls are still warm, toss them in the cinnamon sugar mixture until coated.

Serve

Serve the apple pie egg rolls warm with a scoop of vanilla ice cream on the side, drizzled with caramel sauce.
