Directions

  1. 1

    Prepare the Sausage Mixture

In a large bowl, combine the minced chicken thighs, pork fatback, garlic, smoked paprika, black pepper, salt, cayenne pepper, and ground coriander. Mix thoroughly until well combined.

  2. 2

    Prepare the Casings

Rinse the natural sausage casings under cold water and soak them in water for about 30 minutes. Rinse again and keep them in water until ready to use.

  3. 3

    Stuff the Sausages

Using a sausage stuffer, fill the casings with the sausage mixture, being careful not to overstuff. Tie off the ends of the sausages with kitchen twine.

  4. 4

    Prepare the Smoker

Preheat your smoker to 225°F (107°C) and add the wood chips to create smoke.

  5. 5

    Smoke the Sausages

Place the stuffed sausages in the smoker and smoke for about 2 hours or until they reach an internal temperature of 165°F (74°C).

  6. 6

    Cool and Serve

Once smoked, remove the sausages from the smoker and let them cool slightly before slicing and serving. Enjoy your smoked chicken sausage links!
