Prepare the Sausage Mixture
In a large bowl, combine the minced chicken thighs, pork fatback, garlic, smoked paprika, black pepper, salt, cayenne pepper, and ground coriander. Mix thoroughly until well combined.

Rinse the natural sausage casings under cold water and soak them in water for about 30 minutes. Rinse again and keep them in water until ready to use.

Using a sausage stuffer, fill the casings with the sausage mixture, being careful not to overstuff. Tie off the ends of the sausages with kitchen twine.

Preheat your smoker to 225°F (107°C) and add the wood chips to create smoke.
