Preparation and Cooking

    Preparing the Pig

    Start by cleaning the pig thoroughly and removing any excess hair or innards. Rinse with cold water and pat dry with paper towels.

    Applying the Rub

    In a bowl, mix together the pork rub ingredients. Generously apply the rub all over the pig, ensuring to get it into all crevices. Cover and let it marinate in the refrigerator for at least 4 hours, preferably overnight.

    Setting Up the Smoker

    Prepare your smoker by filling the water pan and preheating it to 250°F (120°C). Soak the apple wood chips in water for at least 30 minutes before using.

    Smoking the Pig

    Once the smoker is preheated, place the pig on the grate. Add the soaked apple wood chips to the smoker box or directly on the coals. Smoke the pig for approximately 8-10 hours or until the internal temperature reaches 195°F (90°C).

    Resting the Meat

    Remove the pig from the smoker and let it rest for at least 30 minutes before carving. This allows the juices to redistribute.

    Serving

    Carve the pig and serve with BBQ sauce, buns, and coleslaw, if desired.
