Prepare the Sausage Mixture
In a large mixing bowl, combine the ground pork, finely chopped jalapeños, shredded cheddar cheese, garlic powder, onion powder, paprika, salt, black pepper, cayenne pepper, and chopped parsley. Mix thoroughly until all ingredients are evenly incorporated.

Stuff the Sausage (Optional)
If using pork casings, rinse and soak them in water for about 30 minutes. Carefully stuff the mixture into the casings using a sausage stuffer, twisting the sausages to your desired length. If not using casings, shape the mixture into patties or logs.

Heat a skillet over medium heat. Add the sausages (cased or patties) and cook for about 5-7 minutes on each side or until they reach an internal temperature of 160°F (71°C).
