Prepare the Pasta

In a large pot, bring salted water to a boil. Add the elbow macaroni and cook according to package instructions until al dente. Drain and set aside.

Make the Cheese Sauce

In the same pot, melt the butter over medium heat. Whisk in the flour and cook for about 1 minute until bubbly. Gradually whisk in the milk, stirring constantly until the mixture thickens.

Add Cheeses and Seasonings

Remove the pot from heat and stir in the shredded Monterey Jack and cheddar cheeses until melted. Add the roasted green chiles, salt, black pepper, garlic powder, and paprika. Mix well.

Combine Pasta and Sauce

Fold the cooked macaroni into the cheese sauce until well combined. If using, sprinkle breadcrumbs on top for added texture.

Bake (Optional)

Transfer the mac and cheese to a baking dish and bake in a preheated oven at 350°F (175°C) for 20-25 minutes until bubbly and golden on top.
