Cook the Pasta

In a large pot of boiling salted water, cook the elbow macaroni according to package instructions until al dente. Drain and set aside.

Make the Cheese Sauce

In the same pot, melt the butter over medium heat. Stir in the flour and cook for 1-2 minutes. Gradually whisk in the milk, stirring constantly until the mixture thickens (about 5-7 minutes).

Add the Cheeses

Remove the pot from heat and stir in the sharp cheddar and Monterey Jack cheeses until melted and smooth. Season with salt, black pepper, garlic powder, and paprika.

Combine Ingredients

Add the cooked macaroni, diced smoked ham, and pineapple chunks to the cheese sauce. Mix well until everything is evenly coated.

Bake (optional)

If using bread crumbs, preheat the oven to 350°F (175°C). Pour the mixture into a greased baking dish. Top with bread crumbs and bake for 20-25 minutes until bubbly and golden.
