Prepare the Chiles
If using fresh roasted green chiles, peel and remove the seeds. Chop them into small pieces and set aside.

Assemble the Sandwich
On two slices of sourdough bread, layer half of the cheddar and half of the Monterey Jack cheese. Add the chopped green chiles on top, then finish with the remaining cheese. Top with the other slices of bread.

Grill the Sandwich
In a skillet, melt 1 tablespoon of butter over medium heat. Place the assembled sandwich in the skillet and cook until golden brown, about 3-4 minutes. Flip the sandwich, add another tablespoon of butter, and cook the other side until golden and the cheese has melted, about 3-4 minutes.

Repeat the grilling process for the other sandwiches, adding additional butter as needed.
