    Cook the Pasta

    In a large pot of salted boiling water, cook the elbow macaroni according to package instructions until al dente. Drain and set aside.

    Make the Cheese Sauce

    In the same pot, melt the butter over medium heat. Stir in the flour and cook for 1-2 minutes until golden. Gradually whisk in the milk, stirring constantly until the mixture thickens, about 5-7 minutes.

    Add the Cheese

    Reduce heat to low, then add the Swiss, Monterey Jack, Parmesan, and Mozzarella cheeses. Stir until the cheeses are melted and the sauce is smooth. Season with salt and black pepper to taste.

    Combine Pasta and Sauce

    Add the cooked macaroni to the cheese sauce and stir until well combined. If desired, transfer to a greased baking dish.

    Optional Breadcrumb Topping

    If using breadcrumbs, sprinkle them evenly over the top of the mac and cheese. You can also drizzle a little melted butter over the breadcrumbs for extra crunch.

    Bake

    Preheat the oven to 350°F (175°C). Bake the mac and cheese for 20-25 minutes, or until bubbly and golden on top.
