Prepare the Ingredients
Clean and slice the mixed mushrooms. Pat the veal medallions dry with paper towels and season both sides with salt and black pepper.

Sauté the Mushrooms
In a large skillet, heat 1 tablespoon of olive oil over medium heat. Add the sliced mushrooms and minced garlic. Sauté for about 5-7 minutes until the mushrooms are browned and tender. Remove the mushrooms from the skillet and set aside.

Cook the Veal
In the same skillet, add the remaining tablespoon of olive oil. Increase heat to medium-high. Add the veal medallions to the skillet and cook for about 3-4 minutes on each side until browned and cooked through.

Combine with Marsala Wine
Reduce the heat to medium. Pour the Marsala wine into the skillet with the veal. Scrape the bottom of the skillet to deglaze. Let it simmer for about 2-3 minutes until the sauce slightly thickens.

Finish the Dish
Return the sautéed mushrooms to the skillet and stir to combine with the sauce. Cook for an additional 2 minutes. Sprinkle with fresh parsley before serving.
