    Prepare the Onions

    Slice the onion thinly. In a skillet, heat 1 tablespoon of olive oil over medium heat. Add the onions and a pinch of salt, and caramelize them, stirring occasionally, for about 15 minutes until golden brown. Remove from heat and set aside.

    Cook the Spinach

    In the same skillet, add the remaining tablespoon of olive oil. Add the spinach and sauté for 3-4 minutes until wilted. Season with salt and pepper. Remove from heat and keep warm.

    Cook the Filet

    Season the filet of beef with salt and pepper. In the skillet, add butter and increase heat to high. Sear the filets for 3-4 minutes on each side for medium-rare, or until desired doneness. Remove filets from skillet and let rest for a few minutes.

    Prepare the Sauce

    In the same skillet, add red wine to deglaze, scraping up any browned bits. Let it simmer for about 5-7 minutes until slightly reduced.

    Plate the Dish

    On each plate, create a bed of sautéed spinach, place the filet on top, and spoon the caramelized onions over the filet. Drizzle with red wine reduction sauce before serving.
