Cook the Bucatini
Bring a large pot of salted water to a boil. Add the bucatini and cook according to package instructions until al dente.

Prepare the Sauce
While the pasta is cooking, heat olive oil in a large skillet over medium heat. Add the pancetta and cook until crispy.

Add Onions and Tomatoes
Add the diced onion to the skillet and cook until translucent. Then add the fresh or canned tomatoes, breaking them up with a spoon. Stir in the red chili flakes.

Combine and Season
Let the sauce simmer for about 10 minutes, then season with salt and black pepper to taste. Drain the bucatini, reserving some pasta water.

Mix Pasta and Sauce
Add the drained bucatini to the skillet with the sauce. Toss well, adding reserved pasta water if needed to loosen the sauce.

Serve
Serve immediately with grated Parmesan cheese on top.
