    Make the Gnocchi

    Boil the potatoes until fork-tender. Drain and let cool slightly, then peel and mash until smooth. Mix in flour, egg, and salt to form a dough. Roll into ropes and cut into pieces.

    Cook the Gnocchi

    Boil a large pot of salted water. Drop in gnocchi and cook until they float, about 2-3 minutes. Remove with a slotted spoon and set aside.

    Prepare the Bolognese Sauce

    In a large skillet, heat olive oil over medium heat. Add onion, carrot, and celery; sauté until soft. Add ground beef and pork; cook until browned. Stir in garlic and cook for another minute.

    Simmer the Sauce

    Add crushed tomatoes, red wine, oregano, basil, salt, and pepper. Bring to a simmer and cook for 30-40 minutes until thickened.

    Combine and Serve

    Toss the cooked gnocchi with the Bolognese sauce. Serve hot, topped with grated Parmesan cheese.
