Preparation
Make the Pasta Dough
In a large bowl, combine the flour and salt. Make a well in the center, add the eggs, and mix until a dough forms. Knead for about 5-7 minutes until smooth. Cover with a damp cloth and let it rest for 30 minutes.
Prepare the Filling
In a bowl, mix the crab meat, ricotta cheese, Parmesan cheese, parsley, salt, and pepper until well combined.
Roll Out the Dough
After resting, divide the dough into four pieces. Roll out each piece into thin sheets, using a pasta maker or rolling pin.
Form the Ravioli
Place a small spoonful of the crab filling on one sheet of pasta, about 2 inches apart. Brush around the filling with water, place another sheet of pasta on top, and press down to seal. Cut into squares or circles.
Cook the Ravioli
Bring a large pot of salted water to a boil. Cook the ravioli for 4-5 minutes until they float. Remove with a slotted spoon and set aside.
Make the Creamy Crab Sauce
In a saucepan, melt the butter over medium heat. Add the minced garlic and sauté until fragrant. Pour in the heavy cream, lemon juice, and Old Bay seasoning. Stir and let simmer for 5 minutes. Season with salt and pepper to taste.
Combine and Serve
Gently toss the cooked ravioli in the creamy crab sauce. Serve immediately, garnished with extra parsley and Parmesan cheese if desired.
