Ravioli and Sauce
Method
Preparation and Cooking
- 1
Make the Ravioli Dough
In a large bowl, combine the flour and salt. Create a well in the center and add the eggs and olive oil. Mix until a dough forms, then knead on a floured surface for about 5-7 minutes until smooth. Wrap in plastic wrap and let rest for 30 minutes.
- 2
Prepare the Cheese Filling
In a bowl, combine the ricotta cheese, grated Parmesan cheese, salt, and black pepper. Mix until well combined.
- 3
Roll Out the Dough
After the dough has rested, divide it into four pieces. Roll out each piece as thinly as possible using a pasta machine or rolling pin.
- 4
Fill the Ravioli
Place small spoonfuls of the cheese mixture onto one sheet of dough, spacing them about 2 inches apart. Moisten the edges of the dough with water, then place another sheet of dough on top. Press around the filling to seal, ensuring there are no air pockets. Cut out the ravioli with a pasta cutter.
- 5
Cook the Ravioli
Bring a large pot of salted water to a boil. Carefully add the ravioli and cook for about 3-4 minutes, or until they float to the surface. Remove with a slotted spoon.
- 6
Serve with Tomato Sauce
In a saucepan, warm the tomato sauce and stir in the chopped basil. Serve the ravioli topped with the tomato sauce.
