Prepare the Broccoli Rabe
Bring a large pot of salted water to a boil. Add the broccoli rabe and blanch for 2-3 minutes until tender. Remove and immediately transfer to an ice bath to stop the cooking. Once cooled, drain and chop into bite-sized pieces.

Cook the Sausage
In a large skillet, heat 2 tablespoons of olive oil over medium heat. Add the Italian sausage, breaking it apart with a spoon. Cook until browned and cooked through, about 5-7 minutes. Remove the sausage from the skillet and set aside.

Cook the Pasta
In the same pot of boiling water, add the orecchiette pasta and cook according to package instructions until al dente. Reserve about 1 cup of pasta water, then drain the pasta.

Combine Ingredients
In the skillet with the sausage drippings, add the remaining 2 tablespoons of olive oil and the minced garlic. Sauté for about 1 minute until fragrant. Add the blanched broccoli rabe and cooked orecchiette to the skillet. Toss to combine, adding reserved pasta water as needed to create a light sauce.

Season and Serve
Season the pasta with salt, black pepper, and red pepper flakes to taste. Stir in the cooked sausage and toss everything together. Serve hot, topped with grated Parmesan cheese.
