Prepare the Ingredients

Finely chop the carrot, celery, onion, and mince the garlic cloves.

Cook the Vegetables

In a large skillet or saucepan, heat olive oil over medium heat. Add the chopped onion, carrot, and celery. Cook for about 5-7 minutes until softened.

Add Garlic

Add the minced garlic and cook for an additional minute until fragrant.

Brown the Meat

Increase the heat to medium-high, add the ground beef and pork, and cook until browned, about 8-10 minutes.

Deglaze with Wine

Pour in the red wine, scraping the bottom of the pan to deglaze. Let it simmer for a few minutes until slightly reduced.

Add Tomatoes and Herbs

Stir in the crushed tomatoes, tomato paste, oregano, basil, salt, and pepper. Reduce the heat to low and let it simmer for at least 30 minutes, stirring occasionally.

Cook the Pasta

While the sauce simmers, cook the rigatoni pasta according to package instructions until al dente. Drain and set aside.

Combine Pasta and Sauce

Once the sauce is ready, toss the cooked rigatoni with the Bolognese sauce until well coated.

Serve

Serve the Bolognese rigatoni hot, topped with grated Parmesan cheese.
