Beef Tenderloin Ingredients

Method

Cooking Directions

  1. 1

    Prepare the Beef Tenderloin

Preheat your oven to 400°F (200°C). Rub the beef tenderloin with olive oil, salt, black pepper, minced garlic, and fresh rosemary. Allow it to marinate for at least 30 minutes at room temperature.

  2. 2

    Sear the Tenderloin

In a large oven-safe skillet, sear the tenderloin on all sides over medium-high heat until browned, about 2-3 minutes per side.

  3. 3

    Roast the Tenderloin

Transfer the skillet to the preheated oven and roast the tenderloin for about 20-25 minutes, or until it reaches your desired level of doneness (135°F for medium-rare).

  4. 4

    Make the Au Jus

In a saucepan, combine the beef broth and red wine. Bring to a boil, then reduce the heat and let it simmer for 10 minutes. In a small bowl, mix cornstarch and water to create a slurry. Stir the slurry into the broth mixture and cook until thickened.

  5. 5

    Rest and Slice

Remove the tenderloin from the oven and let it rest for 10 minutes before slicing it thin. Serve with the au jus on the side.
