Prep the Potatoes
Preheat your oven to 375°F (190°C). Peel and slice the Yukon Gold potatoes thinly, about 1/8 inch thick.
Make the Cream Mixture
In a saucepan, combine heavy cream, milk, minced garlic, salt, and black pepper. Heat over medium heat until just simmering, stirring occasionally.
Layer the Potatoes
In a greased baking dish, layer half of the sliced potatoes. Pour half of the cream mixture over the potatoes. Sprinkle half of the Asiago, Cheddar, Gruyere, and Parmesan cheese over the top.
Repeat Layers
Add the remaining potatoes and pour the rest of the cream mixture over the top. Finish by sprinkling the remaining cheeses.
Prepare the Topping
In a small bowl, mix the asiago cheese for topping with the bread crumbs and melted butter. Sprinkle this mixture evenly over the top of the potatoes.
Serve
Let the dish sit for about 10 minutes before serving. Enjoy your creamy, cheesy au gratin potatoes!
