Make the Enchiladas
Preheat the oven to 350°F (175°C). In a tortilla, place a portion of the cooked beef, roll it up, and place it seam side down in a baking dish. Repeat until all beef is used. Pour enchilada sauce over the rolled tortillas and sprinkle with shredded cheese. Bake for 20 minutes.

Prepare the Tacos
Warm the taco shells according to package instructions. Fill each taco shell with the seasoned beef, shredded lettuce, diced tomatoes, and a dollop of sour cream.

Cook the Spanish Rice
Prepare the Spanish rice according to package instructions while the enchiladas are baking.

Heat the Refried Beans
In a small saucepan, heat the refried beans over low heat until warmed through.
