Chilaquiles Preparation

Prepare the Sauce
In a saucepan, heat the red enchilada sauce over medium heat until simmering.

Layer the Chips
In a large serving dish, layer the corn tortilla chips on the bottom.

Add Chicken or Beef
Spread the shredded chicken or beef over the tortilla chips.

Add Sauce and Cheese
Pour the hot red sauce over the layers and sprinkle with white cheese. Let it melt for a few minutes.

Garnish
Top with sour cream and fresh cilantro before serving.

Cook the Rice
Add chicken broth and tomato sauce to the skillet. Bring to a boil, then lower the heat, cover, and simmer for about 20 minutes until rice is cooked.
Refried Beans Preparation

Heat the Beans
Heat the canned refried beans in a saucepan over low heat until warmed through. If desired, sprinkle shredded cheese on top before serving.
