1. Prepare the Filling
In a bowl, combine the shredded beef or chicken with salt. Mix well and set aside.
2. Heat the Oil
In a deep frying pan, heat the vegetable oil over medium-high heat until hot.
3. Assemble the Taquitos
Take a corn tortilla and place about 2 tablespoons of the filling in the center. Roll the tortilla tightly around the filling and secure with a toothpick if needed.
4. Fry the Taquitos
Carefully place the rolled taquitos into the hot oil. Fry until golden brown and crispy, about 3-4 minutes per side. Remove and drain on paper towels.
