    Prepare the Beef Filling

    In a skillet over medium heat, add olive oil and diced onion. Sauté until translucent, then add minced garlic and ground beef. Cook until browned. Season with cumin, salt, and pepper.

    Assemble the Enchiladas

    Preheat the oven to 350°F (175°C). Take a tortilla, fill it with the beef mixture, and roll it up. Place it seam-side down in a baking dish. Repeat with remaining tortillas.

    Add Sauce and Cheese

    Pour enchilada sauce over the rolled tortillas and sprinkle shredded cheese on top.

    Bake

    Cover the baking dish with foil and bake for 20 minutes. Remove the foil and bake for an additional 10 minutes until the cheese is bubbly.

    Prepare the Rice and Beans

    While the enchiladas are baking, cook the Spanish rice according to package instructions. Heat black beans in a saucepan until warmed through.

    Once the enchiladas are done baking, serve them alongside the Spanish rice and black beans.
