Prepare the Spanish Rice
In a medium pot, heat olive oil over medium heat. Add chopped onion and garlic, sauté until fragrant. Stir in the rice, let it toast for a couple of minutes, then add chicken broth. Bring to a boil, cover, and reduce heat to low. Cook for about 15-20 minutes until rice is tender.

Cook the Ground Beef
In a skillet, brown the ground beef over medium heat. Drain excess fat and return to heat. Stir in taco seasoning and follow package instructions, adding water if required. Cook until beef is fully cooked.

Prepare the Burrito
Warm flour tortillas in a skillet or microwave. Spoon a portion of beef and refried beans onto each tortilla. Sprinkle with shredded cheese, then roll tightly. Place seam-side down on a plate.

Prepare the Enchiladas
Preheat the oven to 350°F (175°C). Spread a little enchilada sauce on the bottom of a baking dish. Fill corn tortillas with a portion of beef, roll them up, and place in the dish seam-side down. Pour remaining enchilada sauce over the top and sprinkle with additional cheese. Bake for 20 minutes.

Serve the Dish
Serve the beef burrito alongside the enchilada, with a side of Spanish rice and beans. Garnish with chopped cilantro and enjoy!
