Method

Beef Enchiladas

    Preheat Oven

    Preheat the oven to 350°F (175°C).

    Cook Beef

    In a skillet, cook the ground beef over medium heat until browned. Drain excess fat.

    Season Beef

    Stir in taco seasoning and a little water, simmer for 5 minutes.

    Prepare Dish

    Spread some enchilada sauce in the bottom of a baking dish.

    Assemble Enchiladas

    Fill each tortilla with the beef mixture, roll up, and place seam-side down in the baking dish.

    Add Sauce and Cheese

    Pour remaining enchilada sauce over the top and sprinkle with cheese.

    Bake

    Bake for 20-25 minutes until bubbly.

    Garnish

    Garnish with sour cream and cilantro before serving.

Beef Burritos

    Cook Beef

    In a skillet, cook the ground beef until browned. Drain fat.

    Mix Filling

    Add cooked rice and black beans to the beef, mix well and season if desired.

    Warm Tortillas

    Warm the flour tortillas in a microwave or skillet.

    Assemble Burritos

    Place beef mixture, cheese, and salsa in the center of each tortilla, fold sides in and roll tightly.

    Serve with sour cream on the side.

Tamales

    Soak Corn Husks

    Soak corn husks in warm water for at least 30 minutes.

    Make Masa Dough

    In a large bowl, mix masa flour, chicken broth, and lard until smooth.

    Assemble Tamales

    Take a corn husk, spread a small amount of masa dough in the center, add shredded beef and a spoonful of green chili sauce.

    Wrap Tamales

    Fold the sides of the husk over the filling and then fold up the bottom.

    Steam Tamales

    Place tamales upright in a steamer, cover, and steam for 1 to 1.5 hours.

    Serve

    Serve warm with extra green chili sauce.
