    Prepare the Prime Rib

    Preheat your oven to 450°F (232°C). Rub the prime rib all over with olive oil, salt, black pepper, and garlic powder. Place it in a roasting pan.

    Roast the Prime Rib

    Roast the prime rib in the preheated oven for 20 minutes to sear the outside, then reduce the temperature to 325°F (163°C) and continue roasting for about 1.5 to 2 hours, or until the internal temperature reaches your desired doneness (medium-rare is about 130°F or 54°C).

    Sauté the Mushrooms

    While the prime rib is roasting, heat a tablespoon of olive oil in a skillet over medium heat. Add the sliced mushrooms and sauté until golden brown, about 5-7 minutes. Season with a pinch of salt and set aside.

    Prepare the Cherry Peppers

    Slice the cherry peppers in half and remove the seeds if desired. Set aside.

    Assemble the Dish

    Once the prime rib is done, let it rest for 15-20 minutes before slicing. Serve the sliced prime rib topped with Merkts cheddar, sautéed mushrooms, and cherry peppers. Drizzle with horseradish aioli before serving.
