1. Cook the Beef

In a large pot over medium heat, brown the ground beef until fully cooked. Drain excess fat.

2. Sauté Vegetables

Add diced onion, minced garlic, and bell pepper to the pot. Sauté until the vegetables are tender, about 5 minutes.

3. Add Remaining Ingredients

Stir in the canned diced tomatoes, kidney beans, chili powder, cumin, salt, black pepper, and water or broth. Mix well.

4. Simmer the Chili

Bring the mixture to a boil, then reduce the heat to low and let it simmer for at least 30 minutes, stirring occasionally.

5. Serve

Ladle the chili into bowls and top with shredded Monterey Jack cheese and diced red onion to taste.
