Cooking Instructions

1

Prepare the Rice

In a pot, bring the vegetable broth to a boil. Add the long grain rice, reduce heat to low, cover, and simmer for about 18-20 minutes or until rice is cooked and liquid is absorbed. Remove from heat and let it sit covered for 5 minutes, then fluff with a fork.

2

Cook the Vegetables

In a large skillet, heat olive oil over medium heat. Add the diced onion, bell pepper, and celery. Sauté for about 5 minutes or until the vegetables start to soften. Add the minced garlic and cook for an additional 1-2 minutes.

3

Combine Ingredients

Stir in the black beans, Cajun seasoning, salt, and black pepper. Cook for another 5 minutes, allowing flavors to meld.

4

Mix Rice and Serve

Add the cooked rice to the skillet, stirring well to combine all ingredients. Cook for an additional 2-3 minutes until heated through. Garnish with sliced green onions and serve warm.
