Preparation Steps
Prepare the Chicken
Start by marinating the chicken breasts in a mixture of buttermilk and hot sauce for at least 1 hour, preferably overnight in the refrigerator.
Prepare the Breading
In a shallow dish, combine flour, cornmeal, paprika, garlic powder, salt, and black pepper. Mix well.
Bread the Chicken
Remove the chicken from the buttermilk mixture and allow excess to drip off. Dredge the chicken in the flour mixture, ensuring it is fully coated.
Fry the Chicken
In a large skillet, heat the vegetable oil over medium-high heat. Once hot, carefully add the breaded chicken. Fry until golden brown and cooked through, about 5-7 minutes per side. Transfer to a paper towel-lined plate to drain excess oil.
Assemble the Po Boys
Slice the French rolls in half lengthwise. Spread mayonnaise on both sides of the bread. Layer the fried chicken, shredded lettuce, sliced tomatoes, and pickles inside each roll.
Serve
Serve immediately with extra hot sauce if desired.
