Prepare the Roast

In a large slow cooker, add the beef chuck roast, beef broth, sliced onion, minced garlic, Worcestershire sauce, bay leaves, salt, and black pepper. Cover and cook on low for 8-10 hours until the beef is tender.

Shred the Beef

Once cooked, remove the roast from the slow cooker and let it rest for a few minutes. Shred the beef using two forks, then return it to the slow cooker to soak in the juices.

Assemble the Po Boys

Slice the French bread rolls in half lengthwise. Pile the shredded beef onto the bottom half of each roll, spooning some of the cooking juices over the top. Layer on the sliced pickles and add hot sauce to taste.

Close the sandwiches and serve hot, with extra juices on the side for dipping.
