1. Prepare the Ingredients
Start by preparing all the ingredients. Dice the onion, bell pepper, and celery. Mince the garlic. Slice the sausage and okra.
2. Cook the Sausage
In a large pot or Dutch oven, cook the Andouille sausage over medium heat until browned. Remove the sausage and set aside.

In the same pot, add the onion, bell pepper, celery, and garlic. Sauté until the vegetables are soft, about 5 minutes.
4. Brown the Chicken
Add the chicken thighs to the pot and brown on all sides. Season with salt and black pepper.

Stir in the diced tomatoes, chicken broth, okra, bay leaves, Cajun seasoning, and thyme. Bring the mixture to a boil.
6. Simmer the Gumbo
Reduce the heat to low, cover, and let the gumbo simmer for about 30 minutes, or until the chicken is cooked through.
7. Add Shrimp
Stir in the shrimp and cook for an additional 5-7 minutes, until the shrimp are pink and opaque.
8. Serve
Remove bay leaves. Serve the gumbo over cooked rice and garnish with sliced green onions.
