Prepare the Grits

In a large pot, bring the water and salt to a boil. Stir in the grits and reduce the heat to low. Cook, stirring occasionally, until thickened, about 20 minutes. Once cooked, stir in the butter and cheddar cheese until melted and well combined.

Set the Grits

Pour the cooked grits into a greased baking dish and spread evenly. Allow to cool at room temperature for at least 1 hour, or until set and firm.

Cut and Coat

Once set, remove the grits from the dish and cut into fry-shaped pieces. Dredge each piece in cornstarch, coating evenly.

Fry the Grit Fries

In a deep fryer or large pot, heat vegetable oil to 350°F (175°C). Fry the grit fries in batches until golden brown and crispy, about 3-4 minutes per batch. Remove and drain on paper towels.

Season and Serve

Sprinkle the hot grit fries with paprika and black pepper to taste. Serve immediately with your favorite dipping sauce.
