Cook the Penne Pasta
Bring a large pot of salted water to a boil. Add the penne pasta and cook according to package instructions until al dente. Drain and set aside.
Sauté the Vegetables
In a large skillet, heat olive oil over medium heat. Add the chopped onion and bell pepper, and sauté until softened, about 5-7 minutes. Add the minced garlic and cook for an additional minute.
Add Cajun Seasoning and Tomatoes
Stir in the Cajun seasoning and diced tomatoes (with their juices). Cook for 3-4 minutes, allowing the flavors to combine.
Incorporate Cream and Cheese
Reduce the heat to low and stir in the heavy cream and grated Parmesan cheese. Mix until the cheese is melted and the sauce is creamy.
Combine Pasta and Sauce
Add the cooked penne pasta to the skillet and toss until the pasta is well coated in the sauce. Season with salt and black pepper to taste.
Garnish and Serve
Remove from heat, garnish with fresh parsley, and serve immediately.
