Preparation Instructions
Prepare the Tofu
Press the tofu to remove excess moisture, then cut it into thin slices.
Marinate the Tofu
In a bowl, combine soy sauce and rice vinegar. Add the tofu slices and let them marinate for at least 15 minutes.
Cook the Tofu
Heat a non-stick skillet over medium heat. Add the marinated tofu slices and cook for about 5 minutes on each side until golden brown.
Assemble the Banh Mi
Slice the baguette in half lengthwise. Spread vegan mayonnaise on both sides, layer the cooked tofu, carrots, cucumbers, and cilantro. Drizzle with Sriracha and season with salt and black pepper to taste.
Serve
Close the baguette, cut into manageable pieces, and serve immediately.
