Prepare the Dough
In a small bowl, dissolve the yeast in warm water and let it sit for about 5 minutes until frothy. In a large mixing bowl, combine the flour, sugar, and salt. In a separate bowl, whisk together the milk, melted butter, and eggs. Add the yeast mixture to the flour mixture and then add the milk mixture. Mix until a soft dough forms.
Knead and Rise
Turn the dough out onto a floured surface and knead for about 5 minutes until smooth. Place the dough in a greased bowl, cover with a clean towel, and let it rise in a warm place for about 1 hour or until doubled in size.
Shape the Beignets
Once the dough has risen, turn it out onto a floured surface and roll it out to about 1/4 inch thickness. Cut the dough into squares or rectangles.
Heat the Oil
In a deep pot or fryer, heat the vegetable oil to 350°F (175°C).
Fry the Beignets
Carefully drop a few beignet pieces into the hot oil, frying them until they are puffed and golden brown, about 2-3 minutes per side. Use a slotted spoon to remove them and drain on paper towels.
Serve
Dust the warm beignets with powdered sugar and serve immediately.
