Prepare the Shrimp

In a bowl, soak the peeled and deveined shrimp in buttermilk for at least 30 minutes to tenderize.

Mix the Coating

In a separate bowl, combine the flour, cornmeal, cajun seasoning, salt, and black pepper.

Coat the Shrimp

Remove shrimp from the buttermilk, allowing excess to drip off. Dredge each shrimp in the flour mixture, ensuring an even coating.

Heat the Oil

In a large skillet, heat vegetable oil over medium-high heat until it reaches 350°F (175°C).

Fry the Shrimp

Fry the coated shrimp in batches for about 2-3 minutes or until golden brown and cooked through. Remove and drain on paper towels.

Prepare the Po Boy

Split and lightly toast the French bread. Add layers of fried shrimp, lettuce, tomatoes, pickles, and drizzle with remoulade sauce.

Cut the Po Boy in half and serve immediately with extra remoulade on the side.
