Crawfish Calas Preparation
Prepare the Mixture
In a large mixing bowl, combine the cooked crawfish tails, cooked rice, chopped green onions, and eggs. Mix until well combined.
Add Dry Ingredients
In a separate bowl, whisk together the flour, baking powder, cayenne pepper, salt, and black pepper. Gradually add this dry mixture to the crawfish mixture, stirring until just combined.
Heat the Oil
In a large skillet, heat vegetable oil over medium heat until hot. You can test it by dropping a small amount of the batter into the oil; it should sizzle.
Fry the Calas
Scoop spoonfuls of the batter into the hot oil, frying a few at a time. Cook until golden brown, about 3-4 minutes per side. Remove from oil and drain on paper towels.
Serve
Serve the crawfish calas warm, garnished with additional green onions if desired.
