If not already done, cook the cochon de lait (young pig) or pulled pork until tender. Shred and set aside.

Slice the French bread or po' boy rolls lengthwise, leaving one side intact to create a hinge.

Assemble the Po' Boy

Spread mayonnaise generously on both sides of the bread. Layer the shredded cochon de lait evenly on the bread.
