1. Soak the Rice Noodles

2. Prepare the Sauce
In a small bowl, mix together the fish sauce, tamarind paste, brown sugar, and Sriracha sauce until well combined. Set aside.

3. Cook the Vegetables
In a large skillet or wok, heat the vegetable oil over medium-high heat. Add the minced garlic and sliced shallots, sautéing for about 1-2 minutes until fragrant.
4. Add the Carrots and Shrimp
Add the julienned carrot and shrimp to the skillet. Cook for 3-4 minutes until the shrimp turns pink and the carrot softens.
5. Add the Noodles
Add the soaked rice noodles to the skillet. Pour the sauce over the noodles and toss everything together to ensure the noodles are well coated.
6. Scramble the Eggs
Push the noodle mixture to one side of the skillet. Crack the eggs into the empty side and scramble them until fully cooked, then mix them into the noodles.

Add the bean sprouts and chopped green onions, tossing everything together for another 1-2 minutes until heated through.
