Method

Prepare Mochi Dough

    Mix Ingredients

    In a large microwave-safe bowl, combine the sweet rice flour and granulated sugar. Gradually add water and stir until the mixture is smooth and well-combined.

    Microwave the Mixture

    Cover the bowl with plastic wrap and microwave on high for 1 minute. Remove and stir. Repeat this process for a total of 3 times or until the dough is thick and slightly translucent.

    Dust with Cornstarch

    Once the mochi is cooked, dust a clean surface with cornstarch. Transfer the mochi dough onto the surface and sprinkle more cornstarch on top to prevent sticking.

    Knead the Dough

    Knead the dough gently until it is smooth and pliable. If the dough is too sticky, add a little more cornstarch.

Assemble Mochi Ice Cream

    Shape the Mochi

    Divide the mochi dough into small pieces (about 2 inches in diameter). Flatten each piece into a circle using your hands.

    Fill with Ice Cream

    Scoop a small ball of ice cream (about 1 tablespoon) and place it in the center of the mochi circle. Gently fold the edges of the mochi over the ice cream and pinch to seal.

    Continue shaping and filling the remaining mochi dough with ice cream until all dough and ice cream are used.

    Freeze

    Place the filled mochi ice cream balls on a baking sheet lined with parchment paper. Freeze for at least 2 hours until firm.

    Before serving, roll the mochi balls in powdered sugar or matcha powder for added flavor and presentation.
