Mochi Dough Preparation

Mix Dry Ingredients
In a large mixing bowl, combine the glutinous rice flour, sugar, and cornstarch. Mix well to ensure even distribution of the dry ingredients.

Add Water
Gradually add the water to the dry ingredients while stirring continuously. Mix until the mixture is smooth and free of lumps.

Cook Mixture
Transfer the mixture to a microwave-safe bowl. Cover with plastic wrap, leaving a small vent for steam to escape. Microwave on high for 1 minute, then stir. Repeat this process for a total of 3 times, cooking for 1 minute and stirring in between until the dough becomes thick and sticky.

Prepare Work Surface
Sprinkle some cornstarch on a clean surface to prevent sticking. Carefully transfer the cooked mochi dough onto the surface.

Shape the Mochi
Let the dough cool slightly, then use your hands (dusted with cornstarch) to flatten the dough into a rectangle about 1/2 inch thick. Cut the dough into squares or circles, depending on your preference.

Prepare Fillings
If using red bean paste, make sure it's at room temperature. If you're using strawberries, wash and halve them.

Fill the Dough
Place a small amount of red bean paste (or a halved strawberry or a scoop of ice cream) in the center of each mochi piece. Fold the edges of the mochi over the filling and pinch to seal it tightly.

Shape and Dust
Once filled, gently reshape the mochi into a ball or desired shape and dust with cornstarch to prevent sticking.
Serving

Arrange the mochi on a serving plate. You can serve them as is or refrigerate for a chillier treat. Enjoy your homemade mochi!
