Prepare the Gaufrettes Chips

If using store-bought gaufrettes, skip to the next step. If making from scratch, slice potatoes very thinly using a mandoline, rinse in cold water, and pat dry. Heat oil in a deep fryer or a deep skillet to 350°F (175°C). Fry the potato slices until golden brown and crispy, then drain on paper towels.

Prepare the Toppings

Finely chop the shallots and chives. Place the sour cream in a small serving bowl and mix in the chopped shallots and chives. Season with salt and pepper to taste.

Assemble the Dish

On a serving platter, arrange the warm gaufrettes chips. Place the caviar in a small bowl or directly on the chips. Serve with the sour cream mixture on the side.
