Method
Chicken Preparation
Season the Chicken
Rub the chicken breasts with olive oil and coat generously with Cajun seasoning.
Cook the Chicken
Heat a skillet over medium-high heat. Cook the chicken for 6-7 minutes on each side until blackened and cooked through. Remove from heat and let rest.
Warm Potato + Bacon Salad Preparation
Cook the Potatoes
Boil the baby potatoes in salted water until fork-tender, about 15 minutes. Drain and let cool slightly, then halve them.
Cook the Bacon
In a skillet, cook the bacon until crispy. Remove and chop into pieces.
Combine Ingredients
In the same skillet, add olive oil, potatoes, bacon, green onions, salt, and black pepper. Toss to combine and heat through for about 5 minutes.
Creamy Coleslaw Preparation
Make the Dressing
In a bowl, mix mayonnaise, apple cider vinegar, sugar, salt, and black pepper.
Combine Slaw Ingredients
Add the shredded cabbage and carrot to the dressing and mix well. Adjust seasoning to taste.
Serving
Plate the Dish
Slice the blackened chicken and serve it alongside the warm potato and bacon salad, and creamy coleslaw.
