Prepare the Wings
Rinse the chicken wings under cold water and pat them dry with paper towels.

Heat the Oil
In a large pot or deep fryer, heat the vegetable oil to 375°F (190°C).

Fry the Wings
Carefully add the chicken wings in batches to avoid overcrowding. Fry for about 10-12 minutes or until golden brown and cooked through. Use a thermometer to ensure the internal temperature reaches 165°F (74°C).

Drain and Coat
Remove the wings from the oil and drain on paper towels. Toss the wings in your choice of barbeque sauce, Cajun seasoning, or sweet chili sauce in a large bowl.

Serve
Plate the wings with celery sticks and a side of ranch dressing for dipping.
