Prepare the Filling
In a bowl, mix the shredded Monterey Jack cheese with a pinch of salt until well combined.
Fill the Wontons
Place a wonton wrapper on a clean surface. Spoon about 1 tsp of the cheese mixture into the center of the wrapper. Moisten the edges with a little water, then fold the wrapper in half to form a triangle, pressing the edges to seal. You can also fold the corners into the center if you prefer a different shape.
Fry the Wontons
Carefully add the filled wontons to the hot oil in batches, avoiding overcrowding. Fry until golden brown, about 2-3 minutes per side. Remove and drain on paper towels.
Make the Honey Mustard Sauce
In a small bowl, combine honey and Dijon mustard. Mix well until smooth.
