Prepare the Potatoes

Preheat the oven to 400°F (200°C). Wash the potatoes thoroughly, then prick them with a fork. Rub with olive oil, sprinkle with salt, and place directly on the oven rack. Bake for 45-60 minutes, until tender.

Prep the Filling

While the potatoes are baking, heat a skillet over medium heat. Add diced onion and green bell pepper, sautéing until softened, about 5-7 minutes. Add the cooked chicken or ground beef, along with black pepper, and mix well.

Scoop and Fill

Once the potatoes are done, remove them from the oven and let them cool slightly. Cut each potato in half lengthwise and scoop out some of the flesh, leaving a thin layer. Fill each potato half with the chicken or beef mixture, then top with shredded pepperjack and sharp cheddar cheeses.

Bake Again

Return the filled potato skins to the oven and bake for an additional 10-15 minutes, or until the cheese is melted and bubbly.

Serve

Remove from the oven, let cool slightly, and serve with sour cream and chopped chives as garnish.
