1. Cook the Meat
In a large skillet, heat the olive oil over medium heat. Add ground beef or chicken and cook until browned. Stir in taco seasoning, salt, and pepper, and cook for an additional 5 minutes.
2. Prepare the Vegetables
While the meat is cooking, chop the green bell pepper, onion, and jalapenos. Set aside.
3. Layer the Nachos
Preheat the oven to 350°F (175°C). On a large baking sheet, spread half of the corn tortilla chips. Top with half of the cooked meat, half of the chopped vegetables, and a layer of both cheeses.
4. Bake the Nachos
Repeat the layers with the remaining chips, meat, vegetables, and cheeses. Bake in the preheated oven for 10-15 minutes, or until the cheese is melted and bubbly.
5. Serve
Remove from the oven, let cool slightly, and serve hot with additional toppings like salsa or sour cream if desired.
